Meal Prep Breakfast Burritos

Hello Friends,

I did some meal prep breakfast burritos and they turned out fantastic! This was my first time doing burritos and I was a little nervous, but boy was I glad when I finished. They taste great and I can pull them out of the feezer and have one ready in about a minute on busy mornings. There are a few things which I'll do different next time and I'll go over that below.

The gist of this is that you are browning up some sausage, veggies and hash browns on the griddle, as a filling for your burritos. I did the sausage first then added the veggies and hashbrowns which was fine, but I didn't get a good cook on the hash browns. I should have known this would happen because I didn't follow my own cooking order chart.

I also did the egg well trick on this cook, similar to when I do fried rice. You just create a big hole in the middle of all your veggies and potatoes then pour your eggs in. This helps to prevent them from spreading all over the griddle.

I ended up making 16 burritos out of this because that's all the tortillas I had, but I had a lot of filling left over. I think if I had enough tortillas I would have been able to get 24 burritos out of it. Reheating them from the freezer is super easy: you just wrap a burrito in a damp paper towel then pop it in the microwave for 60-90 seconds. Some were done at 60, and other ones that I filled too much too the full 90 seconds.
