Hello Friends,

Here’s everything I learned from my last month of griddling. It isn't groundbreaking or cool like some of the viral recipes, but I do think it's helpful.

  • Prep
    • I did some pancakes, French toast sticks and breakfast burritos. My freezer filled up fast but it’s been very nice in the morning. If I don’t have time I can grab my son some pancakes or french toast sticks while I microwave a burrito.

  • Omelets
    • I did them with egg rings and diner style where you just let the eggs pour all over the griddle. I still like the omelet ring a little better because it contains it. I also like the uisinart metal omelet rings better than silicone.
    • If you’re going to pour the omelet straight on the griddle, you can pour it on the filling or pour the eggs by themselves then after they set up put the filling in the middle and fold it. Both ways worked, but I had more rips when I poured the eggs right on the filling. I read somewhere that this is from the protein of the meat, it makes the eggs stick. Also when I pour the eggs right on the filling, they had some brown spots.
      • So I would reccomend sauteeing the meat and veggies on the side then pouring the eggs by themselves on the griddle. Once the eggs set up, add the filling and fold.

  • Tuna Melts
    • They’re delicous, and I don’t make them enough. I feel like I spend too much time trying to make wild and interesting items rather then perfecting the classics.
  • Pancake Mix
    • I tested 7 different ones, and they weren’t really that different. I like Hungry Jack and Patties the best.
  • Sanding a Griddle
    • My friend bought a used griddle, and I sanded off the seasoning then reseasoned it for him. You gotta use a wire wheel, and it takes forever (3 hours). But it does get you back to square one. Moral of the story: your griddle top is never ruined; you just need some time and elbow grease to get it back to new.
