How to Get Your Griddle To The Proper Temp

Hello Friends,

I sent an email recently where I went over the E.G.S Method. This is my simple acronym that I use to remember what temperatures to cook what food at.

Knowing what temperature to cook the food at is great, but the most common follow questions I get is "How do I get my griddle to that temperature?

Well there's three tips I have for getting your griddle to the proper temperature. Before I go over these I just want to mention that you do need an infrared thermometer to measure the temp. If you've been reading these emails for a while you're probably tired of me talking about infrared thermometers, so I apoligize.

  1. I always preheat on low so I don't overshoot my temperature.
  2. Don't turn your griddle on then walk away for 20 minutes. It will get too hot, check it early and often to see if it's at the temp you want.
  3. Sometimes I'll keep the middle two burners on and turn the outside two off. This will give you a cooler zone to do eggs and omelets.
