Hello Friends,

I love White Castle sliders. When I was in college and we were closing down the local watering hole, we'd often have the cab driver take us through White Castle. It was one of the only places that was open and you could get a crave case, which is basically a cardboard suit case full of 30 sliders. I've done them twice on the griddle, once with fresh patties and once with frozen. Both times they were good and the key is dehydrated onions.

My Three Thoughts on Sliders

Fresh Patties

You can make your own fresh patties by rolling out 1 Lb of ground beef on a cookie sheet (12 x 16). First you put down some parchment paper and spray it with non stick spray. Then roll the ground beef out on the sheet pan until it is about 1/4" thick. I then used a pizza slicer to cut 12 little square mini burgers. Take a straw or chop stick and put 5 holes in each patty. This will help the steam come through. I froze the patties and then cooked them the next day in the dehyrdrated onions.

Dehyrdated Onions

The key to making them like White Castle is the dehyrdrated onions, they don't use fresh. All you do is put two parts water to one part dehydrated onion and let it soak for 15 min. So for 12 burgers I do 1/2 cup of dehdrated onions and 1 cup of water. Full disclosure this will make your house smell like white caste. So you may want to let them soak outside to avoid any marital complications. Speaking from experience.

Flipping the Patties

At White Castle they do not flip the patties. They put down the rehydrated onions and water, then burger patties, and finally the buns right on the raw burger patties. The steam comes through the onions and burgers (this is why you poked the holes) and then cooks everything through. This did not work very well for me, but I think there are two reasons why. I had a friend in my griddle group say that it was because I put the patties on frozen rather than fresh. Also I watched a video about white castle and saw that there flat tops have a sensor which regulates the temperature. So I think it keeps it at the perfect temperature to steam everything through.

Overall I would say just flipping the patties is easiest. In the video below I used store bought frozen patties and I cooked them on the onions for a few minutes then flipped and added the buns to steam. That would be my reccomended way regardless if you are using fresh or frozen patties.

The moral of the story is White Castle Sliders on the griddle are definetly in my top 101 recipes! It really doesn't matter if you make your own patties, buy some from the store or, heck, you could probably do the same procces with full sized burgers. All you really need to do in order to achieve the white castle taste is rehydrate some onions, then place your burgers right on top of them. After you flip the burgers top them with your buns so they soften up from all the onion steam and you are good to go. If you want to watch the video it is below.
