Griddle 101: Upgrade Your Sausage Peppers and Onions
Italian Patty Melt Hello Friends, I had a viewer comment on a video that they were doing smashed Italian sausages just like smash burgers. I gave it a try and boy it did not dissapoint. I used some Aunt Millies Italian bread and made a little sauce for the peppers and onions mixture. This one is definetly in the top101 griddle recipes and you should try it. Also, I know it's cold right now, so you could easily do this in a large cast iron pan inside if you got one. 3 TipsSmash or Not To SmashWhen smashing I had problems with the sausage sticking to my press. I did use parchment and I even heated up the press. I don't know if this is because of all the fat in the sausage, or maybe because it was cold outside. Either way, next time I will try just making the sausage into oval patties. Cook Veggies in DrippingsI was trying my best to time this out so everything finished at the same time. However, I also wanted the veggies to cook in the drippings from the suasage. So I put the veggies down first in some oil to get them started, then immediatly smashed the sausage. After it cook for about one minute I flipped the sausage to a different part of the griddle and moved the veggies into the drippings. If I would have smashed the sausage first, then put the veggies down I think the sausage would have finished early and got cold or dried out while I still waited on my veggies. Sweet and SourAdding some vinegar and sugar to the veggies right at the end is fantastic. I saw Adam Regusea do this with some Italian Sausages that he did with Polenta, and I had to try it. I feel like it really put this sandwich over the top. It creates a kind of sweet and sour sauce which makes it different from the marinara I put on my Italian Sausage Hoagie.
