Griddle 101: Top Meals of 2024
The Best of 2024!Hello Friends, I hope you had a fantastic Christmas and got to spend time with your friends and family. I decided to do a quick recap of my favorite meals from 2024. I cooked up a lot of great food on my griddle this past year, but these four were definetly my favorite. 4 MealsBacon Fried CornI don't know why it took me so long to make this, but it was definetly worth the hype. I had seen multiple videos of other griddle cooks doing it, especially Todd Toven, but I had never done it. After trying it I have two main takeaways. First, Todd topped his with flamming hot cheetos. To my surprise I did enjoy this, but I still think tortilla chips are better. I put my leftovers in the fridge and ate them the next day with a bag of tortilla chips like a dip. I almost finished an entire bag of chips it was that good. Second I would say this is the perfect side dish for taco night. If you are getting the griddle fired up I would make this first, then make some tacos. You can eat the bacon fried corn as a side dish, or you could put it right on top of the tacos. Cowboy Stir FryAnother very popular griddle meal that I waited way to long to try. I did mine the lazy way, I bought a ton of pre cut veggies from Kroger. I also used brussle sprouts instead of cabbage. The gist of this is steak, keilbasa, potatoes and veggies all tossed together on the griddle. I would highly reccomend trying this, but I would also reccomend substituting whatever veggies and meat you like. This recipe is easily adjustable so make it your own. Chicken SandwichThis was a recipe I saw Mat Pittman from Meat Church do. I love his channel and the videos he makes. He marinated some chicken thighs in the juice from a can of pickeled jalopenos. Then he cooked them over an open flame, added some cheese, and made a chicken sandwich. I tried it on the griddle and it did not dissapoint. Easy and delicious are two of my favorite things on the griddle and this checks both boxes. Breakfast Burrito Meal Prep I made about 20 breakfast burritos from this meal prep recipe. Not only was it easier than I thought, but they have been a life saver in the mornings. I pull one out of the freezer, wrap it in a wet paper towel, then microwave it for 90 seconds. Sometimes I'll also sear it in a pan on the stove to give it some extra flavor. In my opinion these are as good if not better than a Mcdonalds burrito.
