Now that spring is almost here I'm getting a lot fo new griddle owners on the email list. Also I figured it's a good time to review the basics for those experienced griddle owners out there. When I got my first griddle, all I saw were recipe videos and the occasional seasoning and cleaning. No one was going over the fundamentals that I had learned as a short order cook at Bob Evans. Things like temperature control, cooking order and oil usage. So I decided to put all that infromation together for new owners. Here’s what every beginner needs to know:

🥑 What Oil to Use – Not all oils are created equal. I lik avocado but there's other good options too. I break down which ones hold up to high heat and which will leave a sticky mess behind.

🌡 Temperature Control – The secret to perfect smash burgers or fluffy pancakes? Cooking at the right temp. I explain the E-G-S method (Eggs-300-325, General 350-400, Searing 450+) to keep it simple.

🥓 Cooking Order – Ever cook eggs first and end up with a cold breakfast? I cover the best order to cook different foods so everything finishes at the right time.

🔪 Accessories – You don’t need every fancy tool, but a few essentials will make cooking way easier. I highlight the must-haves.

🧼 Cleaning & Maintenance – A clean griddle lasts longer and cooks better. I share the quick and easy cleaning routine that keeps mine in top shape—plus what to do if rust shows up.
