Hello Friends,
If you remeber I recently surveyed 1,000 griddle owners to find out what trips people up most. The same three things kept coming up: temp control, timing meals to finish together, and cleaning/maintenance. Here's my answers to the 3 biggest struggles.
🌡️ Temperature Control
- Don't cook by the knobs — "medium" means something different on every griddle. Get an infrared thermometer and go by actual surface temp instead.
- Use the E.G.S. method: Eggs (300–325°F), General cooking (375–400°F), Searing steaks/smashburgers (450°F+).
- Preheat on low and check after 5 minutes — griddles heat up fast, and walking away to "finish prepping" is how you end up at 500°.
- Don't be afraid to turn a burner off (or down) mid-cook to drop the temp for a specific food, like eggs at the end of a breakfast spread.
⏱️ Timing Everything to Finish Together
- Prep everything before you start cooking — running back inside mid-cook throws off your timing.
- Cook what takes longest first (bacon/potatoes before pancakes before eggs).
- Hold finished food hot using an oven (180–190°F), a spare grill, the cooler corners of the griddle, or a small wire rack.
- If you're new, start simple — master 2 easy meals (like bacon & pancakes, then smash burgers) before adding more to your rotation.
🧽 Cleaning, Seasoning & Rust
- Seasoning: high heat for 10 minutes, then 4–5 thin coats of oil (avocado oil was the most popular pick in the survey), burning off each coat.
- Cleaning: scrape while cooking, use a little water to loosen residue, dry it off completely (moisture = rust), then finish with a thin oil layer.
- Discoloration and minor pitting are normal — griddles aren't nonstick pans. Most survey respondents (about 40%) just scrape and keep cooking through minor flaking.
- If it does rust, it's never ruined. A pumice stone or paint-stripping wheel will get you back to bare metal so you can reseason.
