Griddle 101: Onion Burger

Cowboy Stir Fry!

Hello friends,

If you’ve never made an Oklahoma onion burger before, this is your reminder of how simple — and ridiculously good — they are. It’s honestly one of the easiest things you can cook on a griddle, and it tastes way better than it has any right to.

Here’s the basic recipe I used in the video:

Oklahoma Onion Burger

  • 1 pound ground beef, divided into 6 small balls
  • Paper-thin sliced onions (a potato peeler actually works great)
  • Salt & pepper
  • American cheese
  • Buns
  • Optional: pickles

How to make it

  • Get your griddle around 400°F
  • Season the beef balls with salt and pepper
  • Add a small handful of thin onions on top
  • Smash the onions into the beef as thin as you can
  • Cook until the edges crisp up, flip, melt cheese, and steam the buns on top
  • Stack it, add pickles if you like them, and that’s it

It’s a simple recipe, but when you get those onions cooked into the beef… man, it’s hard to beat.

If you’re curious about the story behind this one — including the first time I ever had to fire someone back when I was 22 and managing a Bob Evans — that’s all in the video. You can watch it below:
