Griddle 101: My Top 5 Breakfasts

Hello Friends,

When I first got out of college, I worked as a manager at Bob Evans. I didn’t love that job, if I’m being honest, but I did love cooking breakfast on the flat top. That experience stuck with me, and it’s a big part of why I bought a griddle years later. Now, making a big breakfast for my family on a lazy weekend morning is one of my favorite things to do. After 5 years and over 100 breakfast cooks, here are our top 5 family favorites.

1. Upgraded Challah Bread French Toast This is the one my wife and six-year-old both vote for every time. The challah bread makes all the difference—thick slices, dried out a bit before dipping, soaked longer than regular French toast so it cooks through without burning. Add some heavy cream and orange zest to the batter and you’ve got something really special.

2. Big Breakfast (Hash Brown Patties in Bacon Grease) The longer I’ve owned this griddle, the more I’ve come to appreciate how good something this simple can be. Frozen hash brown patties cooked right in bacon grease, nothing fancy, just crispy and delicious every time.

3. Stuffed Pancakes A two-ingredient filling (whipped cream cheese and a pudding snack pack) makes these so much better than regular pancakes. I did banana cream pie pudding with chocolate chips, but the filling combinations are endless.

4. Breakfast Scramble This one’s great because there are so many ways to make it your own. Potatoes, sausage, onions, scrambled eggs, cheese—fold it all together for a scramble, or wrap it up burrito-style like I did this time. Either way, it’s a great way to use up whatever you’ve got on hand.

5. Hash Brown Omelette This is hands-down my favorite griddle meal, and I have to give credit to a channel called True North Cafe for the idea. Crispy hash browns spread into a big rectangle, eggs poured right on top, filled with your meat, veggies, and cheese, then folded over. It uses the whole griddle and it’s always a hit.
