Griddle 101: My Familes Top 5 Meals After 6 Years


Hello Friends,

I’ve tried at least 300 different griddle recipes over the years—and about 275 of those turned into YouTube videos—but these 5 are my family’s absolute favorites. These are the ones we keep coming back to.

Chicken Fried Rice
This one checks every box—fun to cook, uses the whole griddle, and gives you leftovers for a couple days. The biggest difference maker is using cold, day-old rice and cooking everything in garlic butter. Also, don’t skip the egg well in the middle—it keeps things from overcooking.

Challah French Toast
This is easily the best French toast I’ve ever had. The challah bread makes it. Let it soak longer than you think and cook it low and slow. You end up with a soft, almost bread pudding center with a nice crust on the outside.

Chicken Fajitas
We used to do steak more often, but chicken is just more realistic now. Cook the chicken and veggies separately, then bring them together at the end. If you don’t want to mess with a marinade, a seasoning packet works just fine.

Hashbrown Omelet
This is one of those “only on a griddle” meals. Crispy hashbrowns, eggs, cheese, bacon, peppers—it all comes together into one big, filling breakfast. Let the potatoes sit and cook before touching them. That’s how you get that crust.

Bacon Onion Smash Burger
Had to include a smash burger. Cook the onions low with a little brown sugar, then crank the heat for the burgers. If you don’t have parchment, just flip and smash—it works. Stack it with bacon and onions and you’re set.
