Spring is here, Easter is here (feels early this year, but we’ll take it), and it’s time to start using the griddle more again.
These aren’t your typical fast-food breakfast burritos—they’re better. I’ve bulked them up with hash browns and mushrooms, and adding salsa right inside the burrito makes a big difference. I like to make a big batch and freeze them so I’ve got an easy breakfast ready to go during the week. It’s simple meal prep that actually pays off.
Just don’t overfill them—it’s easy to do, and once you do, they’re a pain to wrap.

Make-Ahead Griddle Breakfast Burritos
Ingredients:
- 1 lb sausage
- 1 medium onion, diced
- 1 red pepper, diced
- 1 yellow pepper, diced
- 5 oz mushrooms, diced
- 8 eggs, scrambled
- 2 cups frozen hash browns
- Oil
- Salt and pepper
- 20 (9-inch) flour tortillas
- 1 bag shredded Colby Jack cheese
- Salsa
Instructions:
- Preheat your griddle to 400°F (205°C).
- Add a thin coat of oil and spread out the hash browns.
- At the same time, place the sausage on the griddle. Spread it out and let it sit undisturbed to form a crust.
- After about 5–8 minutes, flip the sausage and chop it up.
- Add a little oil to the other side of the griddle and sauté the onions and peppers.
- After a minute, add the mushrooms. Turn the griddle down to low.
- Make a well in the center of the veggies. Add 1 tablespoon of oil and pour in the scrambled eggs. Turn the griddle down to low or off.
- Slowly pull the eggs toward the center, letting them set.
- When the eggs are about 80% cooked, mix everything together, including the sausage. Remove from the griddle.
- Let the filling cool for about 10 minutes.
- Warm 4 tortillas at a time in the microwave for 20 seconds to make them easier to fold.
- Add two heaping spoonfuls of filling to each tortilla, plus a pinch of cheese and 1 tablespoon of salsa.
- Roll tightly and place in a zip-top bag, removing as much air as possible.
- Freeze.
To Reheat: Wrap in a damp paper towel and microwave for 60–90 seconds.
