Griddle 101:Lazy Birria + Chicken Gyros
Birria and Gyros! Hello Friends, I’ve got two simple recipes for you this week: Lazy Birria and Chicken Gyros. I’m using the term birria loosely—these are by no means traditional birria tacos you’d find on a taco truck or at a restaurant. But they are incredibly simple. You’re really just adding a big piece of chuck roast to a crock pot, tossing in some spices, and a whole can of chipotle peppers for smokiness. Let it cook overnight, and the next day you can make the tacos on your griddle. The tacos are super simple. Just get some oil down, slide the tortillas across the top of the birria juice in the crock pot, and throw them on the griddle. Add some cheese and meat to each taco, fold them, and let them crisp up. The chicken gyros are also crazy easy. My wife and I love these, so we make them a lot. I just grab some Greek dressing and marinate the chicken breast for 30 minutes to 2 hours. Then, heat your griddle to 375°F and cook the chicken pieces for about 3–4 minutes per side. I buy these gyro-specific pitas from a brand at Meijer called Kontos. They’re great—just warm them up on the griddle for about a minute per side. I also have a recipe for homemade tzatziki in here, but sometimes when I don’t have time, I’ll just buy tzatziki from the store. My grocery store has it premade over by the deli. Add some lettuce, tomato, onion, and feta, and you’ve got a super simple weeknight griddle meal. Hope you enjoy these recipes and that they give you some ideas for easy stuff to cook.
