Hello Friends,
I tried my hand at a copycat In-N-Out Double-Double this week. Full disclosure: I’ve lived in Ohio most of my life. I only spent a few months on the west coast after college, and I think I had one of these once. So anyone out west, let me know how I did.
A couple of things make this one work on the griddle. The onions go down first, cooked in butter until they’re soft and browned, then they sit on a cooler part of the griddle to stay warm while you cook the burgers. And since you sear each ball of beef for a minute before smashing it, it doesn’t stick. You don’t need a burger press or parchment paper, just two spatulas.
Copycat Double-Double
Ingredients
- 1 lb 80/20 ground beef, divided into 6 balls
- 1 white onion, diced
- 1 tbsp butter
- Salt
- Yellow mustard
- 6 slices American cheese
- 3 hamburger buns
- Burger sauce
- Dill pickle slices
- 1 tomato, sliced
- Iceberg lettuce leaves
Instructions
- Preheat your griddle to 400°F.
- Melt the butter on the griddle, then add the diced onion and a pinch of salt. Mix until everything is nice and buttery.
- Spread the onions out in a thin layer. Flip and stir them now and then until they’re soft and browned. Move them to a cooler part of the griddle to stay warm.
- Toast the buns cut side down until golden, then set them aside.
- Put the 6 balls of beef down on the griddle and let them cook for about 1 minute.
- Flip each ball over and smash it flat with two spatulas.
- Squeeze a little yellow mustard on the top of each patty, then flip so the mustard side cooks into the meat.
- Put a slice of American cheese on each patty and let it melt.
- Build each burger on a bottom bun: burger sauce, pickles, tomato, lettuce, 2 cheese-covered patties, a big pile of grilled onions, then the top bun.
I hope you give this one a try! If you make it, hit reply and let me know how it compares to the real thing. I’m especially curious what the west coast folks think.
Keep on griddling, Johnny
Also I've updated the eBook with a few new recipes. I sent an email out last week, if you didn't get it and you already purchased an eBook just shoot me an email.
