Griddle 101: Impress Your Wife With Pancakes


Stuffed Blueberry Pancakes

Hello Friends,

Let’s be honest—the best part about griddling is keeping the mess outside while making delicious food for your family. More specifically, for the most important person: your wife.

I’ve mentioned this filling before (it’s in my eBook if you have that), but it’s so easy it bears repeating.

All you do is take a snack pack (lemon pudding cup) and 8 oz of whipped cream cheese and mix it together. You can even make it the night before and leave it in the fridge. Then, use the filling between pancakes, French toast, or even crepes. Also you don't have to use lemon, experiment with different flavors of pudding.

In this video, I put it between blueberry pancakes. I just use a boxed pancake mix, add a little vanilla extract, and maybe a dollop of sour cream when I’m mixing it up. Then, out to the griddle at 375°F.

I cook the bacon first—because I’m always looking for an excuse to cook up a pound of bacon. Then I put the pancakes down and add some blueberries to each one. As I’m stacking them, I spoon two or three scoops of the filling between each pancake. Powdered sugar on top and you’re good to go.

No bacon grease in the kitchen and a salty-sweet breakfast your wife will love.
