Griddle 101: Have You Tried Meal Prep?

The latest video I released is all about making bacon and eggs on the Blackstone, but I covered that topic in a newsletter about a month ago. Rather than repeat myself, I wanted to share something new that I’m experimenting with.

This weekend I did my first attempt at Blackstone griddle meal prep.

I’m keeping it simple because I want to find a system that actually works for my family before I make a video or start giving advice on it.

Here’s what I cooked:

  • 3 pounds of bacon
  • 16 pancakes
  • 2 chicken breasts (about 1½ pounds)

Here’s the meal plan:

Sunday Breakfast: Bacon, pancakes, and fruit

Sunday Dinner: Chicken Tikka Masala (using a simmer sauce) with microwave basmati rice, peas and carrots, and naan bread

Monday Dinner: BLTs with chips, fruit, and veggies

Tuesday Dinner: Chicken fajitas with rice, chips, and salsa

Wednesday Dinner: Leftover pancakes from the freezer, whatever bacon is left (if there is any!), fruit, scrambled eggs, and frozen hash browns.

This gives us 5 meals over 4 days, and that’s enough for my first attempt.

One thing I’ve learned over the years is that I usually stick with new habits when I start small. Trying to prep an entire week’s worth of meals right away would probably just overwhelm me. I’d rather do a few meals consistently and build from there.

If you’d like to try this meal plan yourself, here’s the shopping list:

☐ 2 chicken breasts (about 1½ lbs)

☐ Pancake mix (or ingredients to make 16 pancakes)

☐ Pre-cut fresh fruit

☐ Vegetable tray

☐ 1 jar Chicken Tikka Masala simmer sauce

☐ Microwave basmati rice

☐ Microwave Spanish rice

☐ Frozen peas and carrots

☐ Naan bread

☐ Bread

☐ Lettuce

☐ Tomatoes

☐ Mayonnaise

☐ Chips

☐ Fajita seasoning

☐ Bell peppers

☐ Onion

☐ Salsa

☐ Eggs

☐ Frozen hash browns
