Griddle 101: Hashbrown Omelet & Egg Roll in a Bowl

So I’ve got two of my favorite recipes for you this week. If you’ve watched the channel or subscribed to the newsletter for a while, then these aren’t new to you. If you’re new here, then put this on the must-make list immediately. These are two of my top 10 griddle recipes—and they’re fantastic.

Not only are they good, but I almost feel like you can only make them on the griddle. Technically, you could do egg roll in a bowl inside, but the griddle makes it very easy. And the hash brown omelet—you could try it inside, but I think that would be a pain. These are just made for the griddle.

Hash brown omelet has always been good, but I’m starting to think it’s the best breakfast you can make on the griddle. It utilizes all the space, and it’s something unique that you probably haven’t made before. Also, the large amount of hash browns lowers the temp, which makes it less likely to burn your eggs—and cooking eggs too hot is one of the most common mistakes I see beginners make.

I used fresh hash browns this time, and I don’t think I’m going to use frozen for this dish anymore. The fresh ones turned out so good. I’ll still use frozen occasionally for individual hash brown orders because it’s too convenient not to. If I want a side of hash browns but my wife doesn’t, I can just pull 1 cup of frozen hash browns out of the fridge. But for this specific recipe, from now on—it’s just simply potatoes. Egg roll in a bowl is like a gateway drug to fried rice and stir fry on the griddle. It’s a simple way to get your feet wet with this type of meal. Also—it’s so darn customizable. You can use pretty much any ground meat you want (I chose pork for the video below). Then you can start adding all your favorite veggies with the coleslaw mix. For example, I got water chestnuts this time and forgot how much I love those darn things. I ate them like potato chips while I was prepping the meal.

Also, if you haven’t used some of the sauces like Bachan’s or sesame oil, I’d recommend giving them a go. You won’t be disappointed with the end result. Oh—and I forgot to mention this in the video, but my wife and I love putting yum yum sauce on it when it’s finished. Here's the recipe on my site.
