Griddle 101: Happy 4th of July & 1 Quick Smash Burger Tip

Hey friends, Happy 4th of July weekend! I hope you get to spend it with the people you love, eating great food and appreciating how lucky we are to live in this country. I'm sending this out tonight because I'm sure you'll be busy tomorrow with parades and other fun things to do. My quick tip: If you're using the griddle, you're probably making smash burgers. And if you're making smash burgers, you might be smashing onions into them. The thinner the onions, the better. If you don't have a mandoline, a potato peeler works great.
