Griddle 101: Full Breakfast

Hello Friends,

I’ve got another big breakfast cook for you on the griddle. If you’ve been following me for a while, you’ve probably seen me do a few of these—but honestly, it’s still one of my favorite things to make. I know a lot of you love doing big breakfasts too.

Here are a few things that stood out this time:

  1. The scrape, spray oil, and wipe method In a recent email, I mentioned this technique I picked up from True North Café (a guy who used to do griddle videos). It’s worked great for clean eggs, and this time it also helped my hash browns get nice and crispy. I’m not sure if it was the method or just that I haven’t used dehydrated potatoes in a while, but either way—they turned out great.
  2. Letting the pancakes ride If you ever flip your pancakes too early, don’t be afraid to bump up the heat and let them ride a little longer. I thought I messed mine up during this cook, but they ended up just fine with a little extra time.
  1. A new accessory kit I’m liking. I’m trying to stick to fewer tools, and this new kit came with a small spatula and a big scraper—both higher quality than the ones I had from Blackstone or Camp Chef. The scraper’s big enough to flip pancakes and two eggs at once, which has been super handy.
