Easy Meaty Cowboy Stir Fry!

Hello Friends,

This is my first go at Cowboy Stir Fry and I kept it easy because it was a weeknight. This turned out fantastic and you really could go a ton of different ways with it. For example, I decided to sub out the cabbage for brussel sprouts and it was awesome.

My Three Thoughts on Easy Cowboy Stir Fry

Steak!

I'd reccomend getting a nicer steak. I grabbed one which I thought was a ribeye, then the packages said NY strip. It was next to the ribeyes and it looked like a reibeye, so I think it was just mislabeled. Anyway, my point is I would reccomend getting a nicer steak for this because there's sausage too and you are cutting it up. Also make sure you get it at least one inch thick so you can sear it without overcooking.

Cooking Order

This is a stir fry, so preping ahead and cooking order are very important. Now, I have the full recipe below to help you out, but basically you want to get the potatoes down first then sear the steak. The rest of the vegetables you can move on and off the heat as needed. Just keep in mind that you want to try to cook whatever takes the longest first. So the potatoes first, then sear your steak immediatly after and let it rest for 10 minutes while you cook the other stuff.

Make it Your Way

I decided to buy a bunch of pre cut veggies and frozen potatoes to make this easier. Also, a lot of recipes I saw from the Blackstone channel and elsewhere had squash. Well, I don't like squash but my wife loves mushrooms so I switched those out. And, as I already mentioned we used brussel sprouts instead of cabbage. My wife and I both love brussel sprouts so this was a no brainer.
