Griddle 101: Crepes, Would You Make Them?
Crepes with Cream Cheese Filling Hello Friends, I did some crepes on the griddle and they turned out pretty darn well. I had made these previously at Bob Evans, but that was a long time ago so I was worried. In the end they tasted great with the cream cheese filling and chocolate sauce. It's probably more of a dessert than a breakfast item, but who cares? I feel like crepes aren't super popular but are very ideal to be made on a griddle. So I'm kind of torn wether or not I will put this in the top 101 griddle recipes. I have a poll at the end so you can give me your opinion. 3 TipsSifterI bought a sifter just for this recipe to make sure there were no lumps in the batter. It worked out really well, and I will probably start using it for pancakes as well. I'm certainly no baker but I feel like I'm moving up in the world! Spread ThinThe batter kind of sits on top of itself when you pour it. I had to use the back of my scoop to spread it around more. It wasn't perfect, but I did the best I could, and they still turned out round. They do have special tools for this which helps you spread it around, but I'm not planning on opening a french bakery in my backyard, so I think this method is good enough. The Second FlipFor some reason the second side turned out better on all my crepes. It got those brown colored spots that you are used to seeing on crepes. So I would flip them twice then put the filling on the first side. That way when you roll them up or fold them, they will present very well.
