Chipotle Chicken Meal Prep!
Hello friends,
This week’s video is a little different. I tried some meal prep on the griddle and I told a story from my Bob Evans days—including the time a field mouse got into the restaurant. It’s a longer video, so I wanted to make sure you still got something useful in the email, even if you’re not into the long stuff.
Here’s the quick value from the video so you don’t have to watch the whole thing:
Chipotle Chicken (copycat)

Chicken breasts marinated in: Recipe on my site here
- 8 Chicken thighs, boneless skinless
- 1 teaspoon Cumin
- 4 whole Garlic cloves
- 1 teaspoon Dried oregano
- 2 teaspoon Kosher salt
- 1 tsp Black pepper
- 1 tablespoon Chillie powder
- 2 tablespoon Olive oil
- 1 7 oz can chipotles is adobo only use 4 peppers and all the sauce
- ½ Cup Water
- Cook on the griddle around 400°F until charred and cooked through.
Simple Meal Prep Bowls
- Griddled chipotle chicken
- Peppers and onions
- Uncle Ben’s microwave rice
- Pinto beans
- A little Mexican seasoning on top
- Add mini tortillas on the side for easy tacos
How it went
- Took almost no time to put together
- Reheated great in the microwave
- My wife took it to work two days in a row
- First time I've done meal prep and it worked well. I will be trying it again.
