Griddle 101: Breakfast Burrito


Bacon Breakfast Burrito!

Hello friends,

Here’s why this breakfast burrito is worth firing up the griddle for:

  1. Bacon. It’s the base of everything.
  2. Potatoes cooked in bacon grease. That’s where all the flavor comes from.
  3. Toasting the tortilla in bacon grease. Crispy, smoky, and seals the burrito perfectly.

Here’s how it comes together:
Start by cutting up
four slices of thick-cut bacon and cooking them on the griddle around 375°F. Once the bacon starts to crisp, slide it aside and toss on some diced Yukon gold potatoes that you’ve soaked in water first (so they don’t turn brown).

Coat those potatoes in that bacon grease, then mix them with the bacon and let everything cook until the potatoes are golden and the bacon’s nice and crisp. Add in a handful of diced onions for some extra flavor.

Push everything to the side, pour in four scrambled eggs, and sprinkle on shredded cheese. Mix it all together — that’s your burrito filling. Add a little pico or salsa, wrap it up in a warm tortilla, then toast it right in the bacon grease until golden brown.

Cut it open, top it with sour cream and sriracha, and dig in.
