Griddle 101: Bacon & Eggs "The Basics"

So my bacon and eggs video has been getting a lot of views lately. I'm guessing that's because there are a lot of new griddle owners out there right now. I've also had a ton of new email subscribers, so I thought this would be a good time to review one of the simplest beginner griddle meals.

A few quick tips for bacon and eggs on the griddle:

  • For bacon, I usually turn the griddle on low and start laying it down after about 5 minutes.
  • You can also put the bacon down before you even turn the griddle on. The slower warm-up helps render out the fat.
  • A wire rack is handy for moving finished bacon off the griddle while the rest catches up.
  • Once the bacon is done, scrape off most of the grease and brown bits before cooking your eggs.
  • If you leave the bacon grease and brown bits behind, you'll get what I call "dirty eggs." They taste great, but they'll have those little brown specks throughout them.
  • I like to cook scrambled eggs around 300-325 degrees.
  • I like to pour a little bit of the eggs them make a well in the middle to contain the rest of the eggs..

It's not a fancy recipe, but it's one of the best meals for learning temperature control and getting comfortable on the griddle.
