Griddle 101: Bacon and Eggs


Bacon and Eggs!

Hello friends,

I know a bunch of new griddle owners showed up after Father’s Day (welcome aboard!), so I figured it’s a good time to slow down and go back to the basics—bacon and eggs on the Blackstone.

I made a quick video walking through how I like to do it, but here’s the gist:

I start by turning the griddle on low and letting it warm up for about 5 minutes. Even if it hasn’t hit temp yet, I’ll go ahead and lay the bacon down. You don’t need screaming heat—somewhere around 300–350°F is perfect. It’ll climb as you cook.

As the bacon renders, I keep flipping it to help it cook evenly and reduce curling. Once pieces finish, I move them to a wire rack to keep them from overcooking (or just shove them into a cooler zone if you don’t have one).

After the bacon’s almost done, I move it all to one side and scrape off most of the grease—especially the brown bits, because that’s what gives you “dirty eggs.” Some people love that, but I do not.

Before I drop the eggs, I’ll turn off the middle two burners. That gets me closer to 300°F in the center—perfect for scrambled eggs. I drop a little butter down, then slowly pour in the eggs to control where they go. I use a trick where I let a bit of egg set up first to make a little well, then pour the rest in there. It keeps them from running all over the place.

Then it’s just a little salt, pepper, garlic powder, maybe some cheese if you’ve got it, and let ‘em sit. You can slide them closer to the heat on the outside burners to cook faster or keep them in the middle if you like them softer.

It’s not fancy. It’s just bacon and eggs on a griddle—but done right, it’s still one of my favorite things to make.
