I just wanted to say thank you to everyone who voted and replied to last week’s email. I got a ton of thoughtful responses—and I read every one. It really helped shape this video and make it more useful for everyone with a griddle, not just a list of my personal opinions.

That was the goal: real advice from real griddle owners.

Here’s what came out on top, counting down from #7 to #1:

7. Bring your griddle up to temp slowly
Don’t just crank the heat to high right away—this can lead to warping. Griddles heat up fast, and it’s much easier to go hotter than to cool it back down.

6. Use cheap white bread to find your hot zones
Do a “toast test.” Lay out a full loaf of white bread, set burners to medium-low, and check after 2–3 minutes. The golden spots will show you your hot zones.

5. Cool down with a squirt of water while cooking
A little water in a squeeze bottle can cool down part of your surface mid-cook (especially helpful for eggs). Just don’t dump a bunch at once—warping risk again.

4. Use high smoke point oil, and don’t overthink seasoning
I’ve used canola, avocado, and the Blackstone branded stuff. It all works. I mostly cook with avocado oil. Use what you like. And if you want more on temp control and oil talk—check out my free eBook.

3. Smash burger balls should be under 3 oz
Smaller balls = better smash. You can even flip them before smashing to skip parchment paper.

2. Prep your ingredients ahead of time
It sounds simple, but carrying everything out on a tray (I use cookie sheets) saves a lot of hassle. I forget stuff all the time—this helps.

1. Use an infrared thermometer
This got the most votes—and I say it all the time. You don’t need an exact temp, but it helps to know where you’re at. My favorite 2-in-1 model is in the description of the video.
