Griddle 101:4 Mothers Day Griddle Meals

Mothers Day!

Hello Friends,

If you’re thinking about firing up the griddle for Mother’s Day, I figured I’d pass along a few things my wife really enjoys.

First up: a steak, shrimp, and chicken hibachi plate. Toss some green onions and oil down, get your rice going, and throw on your meats — I usually do steak in teriyaki, chicken in Italian dressing. Some veggies (zucchini and onions work great), scrambled eggs right in the middle of the rice, and finish it all off with a little soy sauce and sesame oil. The shrimp cooks last — they only need a few minutes.

Next: a bacon avocado omelet. I like using an egg ring, but you don’t have to. Bacon goes in the ring and on the side, then pour in the eggs. Add cheese, avocado, and those bacon slices back on top.

If steak is your love language, New York strips on the griddle are a win. I just season with salt and pepper, then sear them hot — like 450° hot. Baste with butter and garlic, rest in foil, and maybe toss on some asparagus, onions, or mushrooms while the steak rests. My wife likes hers more done than I do, so I cook them in different zones on the griddle to get them just right.

And finally: French toast. The trick? Thick slices of challah bread, dried out a bit so they soak up that custard. Batter’s made with cream, eggs, cinnamon, orange zest — all the good stuff. Soak each slice for a few minutes, cook low and slow around 325°, and you’ll end up with something that’s crispy outside, custardy inside. Top it off with butter, syrup, maybe some powdered sugar and fruit.

Anyway, just wanted to share a few ideas if you’re cooking for someone special this weekend. I've got a video below going over each meal and a link to my website for the Challah French Toast Recipe.
