I got three new recipes for tacos on the griddle that all are fantastic. They all are going into an updated copy of my Griddle 101 ebook. Not only are these deilicious but I think they really utilize the space of the griddle and are perfect griddle meals. Instead of downloadable pdf's, I have links to the recipes on my website. 3 Tacos
Tacos Dorados – These crispy, cheesy tacos take classic ground beef to the next level. Sauté diced onions and seasoned ground beef on the griddle, then mix with shredded Colby Jack cheese. Warm corn tortillas in a little peanut oil, stuff them with the beef mixture, fold, and fry until golden brown and crispy. Add your favorite toppings, and you're good to go. (recipe here)
Carne Asada Tacos – Tender, juicy, and packed with flavor! Start with pre-sliced chuck steak (or cube your own), season it with salt, garlic powder, pepper, and a squeeze of fresh lemon. Cook low and slow on the griddle (around 325°F) to render the fat and lock in flavor. Serve on warm tortillas with fresh cilantro, diced onions, and a splash of hot sauce. (recipe here)
Chipotle-Style Chicken – Marinate boneless chicken thighs overnight in a smoky blend of chipotle peppers, adobo sauce, and spices. The next day, cook them on a 400°F griddle to get that signature char. Serve with grilled fajita veggies, cilantro rice, or in a taco for a homemade version of your favorite burrito chain. I'd highly reccomend trying all of these tacos. The steak one was my wifes favorite and I really liked tacos dorados.
