Griddle 101: 2 New Recipes!


Texas Toast!

Hello friends,

I’ve got two new breakfast sandwiches up on the website (and in my Griddle 101 ebook)! Both of them use Texas toast—and if you’ve followed me for a while, you know how much I love the stuff. It’s big, fluffy, and perfect for sandwiches, especially breakfast.

The first one is a sausage breakfast sandwich topped with smothered and covered Waffle House-style hash browns and a fried egg right on top.

The second is my wife’s favorite omelet turned into a sandwich: a bacon omelet with Gruyère cheese, smashed avocado, and everything bagel seasoning on toasted Texas toast.

I highly recommend trying both—or just grabbing some Texas toast and making your own breakfast sandwich. That’s really the takeaway here:

What’s your favorite type of hash browns to use on the griddle? I’ve made them from scratch a few times, but honestly—I don’t think it’s worth the effort. My go-to is the fresh kind from the cooler section, like Simply Potatoes. They cook up great, but I’ll still use frozen or the boxed dehydrated kind if that’s what I have on hand.

One thing with Simply Potatoes—you kind of need to cook the whole bag, and sometimes I just don’t need that much. Either way, I always use a mix of butter and oil on the griddle, then hit them with a little salt and pepper.
