Bacon Fried Corn: It's in the Top 101

Bacon fried corn has always been a griddle classic that I first saw done by Blackstone's Todd Toven. I had seen a lot of variations on it over the years but never gave it a try. I just made it recently and I'm hear to tell you that it is worth the hype. It also has made its way into the list of my top 101 griddle recipes.

My three thoughts on bacon fried corn

More Space More Bacon

It takes advantage of the large amount of space on your griddle. Like a fried rice or egg roll in a bowl this recipe is basically made for a griddle. I suppose you could try this inside with a cast iron pan but it seems like it would be difficult and very messy. I easily whipped this up on the griddle and it kept all the bacon smell out of my house, which always keeps my wife happy.

Taco Tuesday Side

Next time I make this it will be with tacos. I've been playing around with copy cat chipotle chicken recipes, and I think they would be great together. You could easily make the corn and put it in the oven to hold hot while you finish up the chicken. Also, you've already got a bunch of taco ingredients with this recipe, so you might as well go all the way and make it a taco bar.

Ditch The Cheetos

I followed most of the recipes I saw online initially and they finish the corn with cheetos. Now this was way better than I thought it would be, and I'm definetly not judging. However, after it sat in the fridge overnight I had some the next day with tortilla chips and it just felt right. So my recipe below doesn't follow the video exact because I replaced the Cheetos with tortilla chips.
